Healthy Chocolate Pudding

Chocolate pudding is a classic childhood favorite for many of us. Growing up we had it as after-school snacks in snack packs. Those vanilla and chocolate combos were always a first choice.
This is a simple healthier version made with pantry staples.
Quick and and easy and tastes great both warm and cold. Oh believe me you’ll have to maintain yourself when it gets done in the pan!
Ingredients:
- 1 cup coconut or almond milk
- ¼ cup coconut sugar
- 2 tablespoons cocoa powder
- 1 ½ tablespoons cornstarch
- 1 teaspoon vanilla extract
Directions
- Heat the milk, coconut sugar, cocoa powder, cornstarch, and vanilla extract in a saucepan over low heat.
- Cook and stir until thick and smooth, about 10 minutes.
This healthy chocolate pudding can be eaten hot from the pan or chilled before serving.
Makes 2 servings, 1 cup each
