Pumpkin Cheesecake Bars

Pumpkin is a favorite fall flavor of mine and I enjoy using it in different dishes and beverages. I typically make a pumpkin pie or pumpkin cheesecake for the holidays and this time I decided to go for a handheld version with the bars.
Now I usually just go to my old recipe box for this but I don’t have that on hand in my camper so I followed a recipe from My Baking Addiction and modified it a bit by omitting the streusel topping. I hope you love it as much as my husband did!
Recipe Ingredients
yield: 16-20 prep time: 25 mins cook time: 30-40 mins chill time: 1 hr 30min
For the Crust:
- 2 cups graham cracker crumbs *about 12 sheets of graham crackers crushed
- 1 teaspoon cinnamon
- 1/2 cup cold butter
For the Cream cheese Filling:
- 2 packages, 8 oz ea of cream cheese, softened
- 1 cup sugar
- 1 cup pumpkin puree
- 2 tablespoons whole wheat flower *or flower of choice
- 1 tablespoon of pumpkin pie spice
- 1/4 teaspoon ground ginger
- 2 tablespoons heavy whipping cream
- 2 eggs
For the Whipped Topping:
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 2 tablespoons of powdered sugar

Instructions
- Go ahead and preheat the oven to 350 F. Grab a large bowl and mix together the graham crumbs and cinnamon. Cut in the cold butter using your hands or a pastry blender or fork, until its combined and has a sand like texture. Next spread the mixture into an ungreased 8×8, 9×9 baking pan. Bake for 10 minutes. Cool for 10 minutes.
- While crust is baking mix together the softened cream cheese and and sugar until well blended. Add in pumpkin and the remaining ingredients. Mix together well until smooth.
- Pour batter on top of the pre cooked crust and put into preheated oven. Bake for about 30-40 minutes or until the center is no longer jiggly.
- When cheesecake is done take out and cool on wire rack for about 30 minutes. After cooled, refrigerate for an hour or until set firmly.
- Cut pumpkin cheesecake into 4×4 rows. Top each bar with some delicious homemade whipped cream and a sprinkle of pumpkin spice.
